Carhillton Shiraz 2004 Reserve
2004 was an excellent growing season in the Yarra Valley with cool to mild conditions in early spring encouraging substantial canopy growth and even berry maturation. The drier than average summer conditions saw maximum flavour development in the berries. Separate parcels of shiraz fruit was harvested from our family-owned Yarra Valley vineyards and fermented in small traditional open fermenters. Following extended post-ferment maceration and malo-lactic fermentation these wines were pressed off skins and blended after quality assessment trials. Maturation in high-quality French oak barriques for up to eighteen months, including several rounds of individual barrel selection occurred before the final blend was decided upon and finished.
The 2004 Cahillton Shiraz exhibits classic varietal aromas of ripe plum, pepper and leather with distinctive secondary characters reminiscent of soy sauce and dried sage and oregano. The medium-weight, generous palate demonstrates black cherry and currant fruit flavours combined with powdery tannins and a long, tobacco-influenced finish. Stylistically much more in line with the Rhone Valley than other Australian examples, this complex shiraz is excellent drinking now and will age well in the bottle for the next 10 years.
